nano Ice Cream

Abstract

Liquid nitrogen is used to cool a creamy mixture at a rapid rate such that it precipitates super fine grained crystals of (nano) ice cream.

Recipe (for about 20 people or ½ gallon)
1 cup sugar
1 quart half-and-half
1 pint heavy cream
8 T vanilla
1 liter Liquid Nitrogen

Note: Wear protective wear as show in the video when making nano ice cream.
